cucumber raita with coriander mint chutney recipe- Raita is a dip where different veggies are mixed in yogurt and flavored with some spices. The recipe i am sharing today is the basic Cucumber raita with Coriander mint chutney. Its a great side for any spiced rice dishes, Pulav, Biryani, and for chapathi.
Some main course recipe ideas that can be served with raita-
Vegetable Pulav
Ingredients:
- Medium Cucumber -1
- Tomato -1
- Red onion- ½ chopped fine
- Coriander mint chutney- 1 tsp (recipe follows)
- Yogurt/Curd as desired
- Salt to taste
- Coriander/Cilantro for garnish
Coriander mint chutney:
- Coriander leaves- ¼th cup
- Mint leaves- ¼th cup
- Green chilly – 2 ( reduce it for a mild chutney)
- Salt to taste
Combine the above ingredients with some water and grind to a smooth paste. The consistency of the chutney should be little thick.
Procedure:
Finely chop the cucumber, onion and tomato and place them in a bowl. Add the coriander mint chutney, yogurt and salt. Mix well and the raita is ready to be served.
