My kids don’t like the idea of there pasta being drenched in tomato sauce. Actually my older one prefers no tomato sauce in her pasta. Which is fine with me because when ever i bring the tomato sauce more than half of it goes to the trash for just sitting in the refrigerator for weeks.
I make a simple saute with some veggies, garlic and Italian spices. Rather than steaming, stir frying the veggies brings out the natural sweetness and add a ton of taste to your pasta. I also add few cherry tomatoes which gives just enough wetness to the pasta. This works beautifully for a lunch box, there is no mess involved in packing it!
Most of all no fancy or processed sauces go in making this simple pasta!

Half pound of pasta ( any kind is ok, I used tricolor Rotini)
- button mushrooms – about 10
- medium carrot – 1 grated
- red or green bell pepper- 1 (sliced)
- cherry tomato -15 cut to half ( or 2 medium tomatoes diced)
- garlic pods – 3 (thinly sliced)
- Red crushed pepper to taste
- Crushed black pepper to taste
- Italian seasoning to taste
- Salt and lemon juice to taste
- Extra virgin olive oil [EVOO] ( or any kind of oil)- 2 tbsp
In a deep pot add lots of water and bring it to a boil. Now add the pasta and half teaspoon of salt. Mix and cook till aldente. what you are looking for is pasta to be cooked but still has a bite to it. Drain and transfer to another pot. Add quarter tbsp of oil to the pasta and set a side.
In a non stick pan add the EVOO, when the oil gets hot add the sliced garlic, saute for 30 seconds. Now add the bell pepper and salt. Sauteed for a minute. Now add the sliced mushroom. Cook for five minutes. Now add all the seasonings, chopped tomato and grated carrot. Cook for another fiveto ten minutes. minutes.
Now add the cooked pasta to the sauteed veggies and mix. Turn off the heat.
Finally add some fresh lemon juice, taste and re season accordingly.
