I add some yogurt/ curd to the dough. The yogurt helps in making soft parathas. After few trail and errors, the proportion 1:2 has worked best for making these paratha’s.That is one cup of oats to two cups of whole wheat flour. This proportion has given me the best soft tasting flaky oat paratha’s ever.
It’s a great go to and lunch box recipe as well.
My kids like to eat the palak paratha with some cucumber carrot raita.
- Instant oats- 1 cup
- Whole wheat flour- 2 cups
- Chopped spinach – 1 ½ cups packed
- Cumin powder- ½ tsp
- Red chilly powder- ½ tsp
- Curd/yogurt – 3 tsps
- A pinch of turmeric
- Salt to taste
- Some Whole wheat flour for dusting
- 3 tsps of Oil to mix in the dough and
- oil to make the paratha’s
- Water to mix the dough
Procedure:
Take the oats add just enough water to them. Mix. Leave it for ten minutes.
After ten minutes, add the rest of the ingredients – whole whet flour, spinach, cumin seeds, chilly powder, turmeric, salt, yogurt, oil and necessary water to make the dough. Knead it to make a medium soft dough.
Let the dough rest for atleast fifteen minutes.
Divide the dough into equal size portions. Roll out each dough into a medium circle, apply some oil all over. Close it to form a triangle. Roll the dough again. This way of rolling the dough gives you flaky paratha’s.
Heat a tava or pan, apply some oil and cook the paratha on both sides.
Remove and serve it with Pickle and Yogurt.
