Avial Recipe | Kerala style Avial | Onam Sadya Recipes

Avial Recipe:

Ingredients:

  • Mixed Veggies – 3 cups ( I used Squash, Potato, Green Beans, Carrot and Peas)
  • Turmeric Powder – ½ tsp
  • Curd/Yogurt- 3 tbsps
  • Salt to taste
  • Water as required

To grind:

  • Fresh grated coconut – ½ cup
  • Green chilly – 3 to 4
  • Cumin seeds – 1 tsp
  • A Handfull of coriander leaves

 
To Temper:

  • Coconut oil- 1 tbsp
  • Mustard seeds- 1 tsp
  • Cumin seeds – 1 tsp
  • Dry red chilly -2

Procedure:

  • Grind  the coconut, green chilly, cumin and coriander leaves with very little water to a coarse paste.
  • In a pan heat the oil. When the oil gets hot, add the mustard seeds. When the mustard starts dancing around, add the cumin seeds, curry leaves and dry red chilly. Fry for few seconds. Keep on the side.
  • Chop the squash and potato to cube size pieces. Cut the beans and carrot to ½ inch pieces.
  • In a vessel add enough water and add the potato, turmeric powder and salt. Cook for ten minutes. Now  add the squash, green beans, carrot and peas. If you think you need more water add it.
  • Cook till soft but still holding shape. Add the ground paste. Mix and simmer for another ten minutes.
  • Turn off the flame. Add the yogurt and the seasoning. Mix gently.
  • Serve Avial with hot rice!
