Badam Milk with Almond Flour

Badam Milk – a popular Indian flavored drink made with milk, almonds and sugar and flavored with kesar (saffron) and cardamom.

Traditionally badam milk is made by soaking whole almonds. Today I am sharing the easy method of making the badam milk with almond flour.

Enjoy this rich and creamy drink at the comfort of your home. Can be served hot or cold.

What is Badam Milk?

Badam Milk is a sweet almond milk infused with saffron, cardamom and nuts.

Extremely tasty and nutritious and often given to kids and pregnant women. But can be equally enjoyed by one and all.

Badam milk is also called as badam pal or badam doodh.

Ingredients:

Ingredient note:

Almond Flour: I have used store bought almond flour which I got from Costco.

Milk: full fat milk is preferred, but 2 % will work too.

Sugar: regular white sugar or coconut sugar can be used

Cardamom: gives a wonderful aroma to the badam doodh

Saffron: gives beautiful color and flavor to the milk, do not skip.

Step by Step instructions on making Instant Badam Milk:

1- Soak the almond flour and few pinches of saffron (optional) in one cup of warm milk for five minutes. After 5 minutes, add them to a blender and makes smooth paste. The mixture needs to be very smooth.

2- Add rest of the milk to a pot and warm the milk. Take 2 tbsps of the milk in a bowl and add few saffron strands.

3- Add the ground almond mixture and mix it with a whisk to remove the lumps. In low-medium heat let the mixture simmer for 12-15 minutes. Stir often to avoid the milk getting stuck in the bottom of the pot.

4- Add the saffron soaked milk and sugar. Let the sugar dissolve completely and taste and adjust the sweetness. Mix and simmer for couple more minutes or until your desired consistency.

5- Finally add some cardamom powder and nuts. and turn off the stove.

6- Serve the badam milk hot or chilled.

Serving suggestions:

Badam milk can be enjoyed either hot or cold. Personally we like it cold. If you are not particular you can serve it hot in the winter and cold in summer.

Is Badam milk good for health?

It is extremely nutritious with many health benefits.

Where can I find almond flour?

I bought it in Costco, you can also find it in regular grocery stores or online.

Can I use whole almonds instead of almond flour?

yes, soak the almonds in hot water for 45 minutes, peel and grind to smooth paste.

Ingredients

  • 3.5 cups milk ( preferably whole milk or atleast 2 % milk)
  • ¾ cup almond flour
  • 2.5 – 3 tbsp white sugar ( or coconut sugar)
  • ¼ tsp saffron
  • 2 cardamom pods, crushed
  • 1 tbsp charoli ( or crushed almonds) optional

  • Add the ground almond mixture and mix it with a whisk to remove the lumps. In low-medium heat let the mixture simmer for 12-15 minutes. Stir often to avoid the milk getting stuck in the bottom of the pot.
  • Add the saffron soaked milk and sugar. Let the sugar dissolve completely, taste and adjust the sweetness. Mix and simmer for couple more minutes or until your desired consistency.
  • Finally add some cardamom powder and nuts. and turn off the stove.
  • Serve the badam milk hot or chilled.

Notes

Badam milk stays fresh for up to 3 days in the refrigerator.
