Brookies are a delicious dessert that combines the best of both worlds: brownies and chocolate chip cookies. They are rich, decadent and delicious.
What is a Brookie?
Brookies is a two layer dessert where brownie batter is topped with chocolate chip cookie batter and baked till golden.
If you love brownies and chocolate chip cookies this recipe is a must.
As there are two layers to this recipe, the main complain people have while making brookies at home is – the brownie layer isn’t cooked well while the top layers gets crispy and golden.
After few trials I was able to attain the perfect texture and flavor of what a brookie should be. With few minute changes I followed the brownie and chocolate chip cookie recipe from my blog and it worked great.

We need two batters to make the Brookies –
- Brownie batter
- Chocolate Chip Cookie batter
Few key points before proceeding with the recipe
- Use soft room temperature butter ( for the cookie batter)
- Eggs should be at room temperature.
- The recipe requires both white sugar and brown sugar. Highly recommend using both for the best taste.
- To measure the flour scoop it into the measuring cup, pile it over the top and level it off.
- Use a 9 x 13 pan and cover the batter for the first 20 minutes of cooking.
How to make Brookies:
1- Make Brownie Batter
Line a 9 x 13 with parchment paper. Melt ½ cup butter in microwave. Add ¾ cup white sugar and ¼ cup brown sugar to the melted butter. Whisk it for 2 minutes.
Add 2 eggs and whisk it for 2-3 minutes till the mixture becomes light and pale.
Stir in 1 teaspoon vanilla extract, ½ cup flour, ⅓rd cup cacao powder, ¼ teaspoon baking powder and ½ teaspoon salt.
Mix until well combined.
Spread the brownie batter in a 9×13 inch pan.
2: Make the Chocolate Chip Cookie batter
Add ½ cup soft butter into a large bowl. Add ½ cup white sugar and ¼ cup light brown sugar and beat until creamy and well combined. If using hand mixer beat it for 3 minutes, if using whisk do 5 minutes.
Add an egg and one teaspoon vanilla extract and beat for 10-15 seconds.
Add 1 ¼th cup flour, ½ teaspoon each of baking soda and salt.
Gently fold until well combined. Add ½ cup chocolate chip cookies and mix well.
Dollop small spoonful’s of the cookie batter evenly over the brownie batter. Lightly press it with your fingers so it covers most of the brownie batter. Sprinkle few chocolate chips on the top.
Cover it with a foil and bake at 350 F for 20 minutes. Remove the foil and bake it uncovered for another 17-20 minutes. Tooth pick inserted must come out clean. Mine were done at a total of 37 minutes.
Let the brookies cool in the pan for an hour. Remove from the pan and let cool for another hour before cutting.
This recipes yields 24 pieces. Enjoy them with a cup of chilled milk and fruit.
Tips for Best Brookies:
- Use softened butter ( at room temperature for atleast 2 hours) for the cookie batter.
- Eggs at room temperature.
- In the brownie batter mix the butter, sugar and eggs till pale and creamy.
- In the cookie batter beat the sugar and butter till creamy.
- Use light brown sugar, it gives a great caramel flavor.
- Use light color pan to bake. Dark color pans absorb more heat and make the edges crispy faster while the center still needs cooking.
- Cover the pan with aluminum foil for the first 20 minutes of baking. Don’t skip this step.
- Do not get tempted to cut them, cool completely before slicing.

Baking the Brookies
- Cover it with a foil and bake at 350 F for 20 minutes. Remove the foil and bake it uncovered for another 17-20 minutes. Tooth pick inserted must come out clean. Mine were done at a total of 37 minutes.
Notes
- Spread the brownie batter immediately into the baking pan, if not it gets little hard to spread it evenly.
- If your cookie batter is very sticky, add 1-2 teaspoons of flour and mix it.
- Use a 9×13 pan and cover the batter with a foil for the first 20 minutes of cooking.
- Cool completely before cutting the brookies.
