Bruschetta with Spinach, Red bell pepper and Mozarella cheese

Bruschetta with Spinach, Red bell pepper and Mozzarella cheese Recipe:


Ingredients:

  • Any kind of Italian bread – 6 to 8 pieces ( ½ inch thick slices)
  • Packed Spinach – 3 cups
  • Red bell pepper- 1 sliced thin
  • Garlic cloves – 3
  • Olive oil  as needed
  • Shredded Mozarella chesse as needed
  • Salt to taste
  • Red chilly flakes- ¼ th tsp
  • Crushed black pepper to taste
  • Lemon juice – 1 tsp

Procedure:

Preheat the oven to 350 F. Toast the bread for five minutes till slightly crisp. (Depending upon how thick the bread is toasting temperatures may vary). Remove the bread and set aside.

In a skillet heat the Olive oil. Add the sliced garlic. Fry for few seconds. Add the red bell pepper, red chilly flakes  and some salt. Saute for few minutes.

Add the chopped spinach and cook until wilted.  Add lemon juice and black pepper. Combine and turn off the heat.

Add the sauteed spinach and  grated cheese on top of the toasted bread and bake in the oven for few  minutes ( about 5 to 10 minutes) till cheese is melted.

Remove and serve immediately.
