Burnt Garlic Fried Rice

Burnt Garlic Fried Rice is one of my favorite dishes from Indo Chinese cuisine.

Browned (burnt) garlic is tossed with rice, and colorful veggies giving tons of flavor.

Irresistibly delicious and gets done in 20 minutes.

Indo Chinese dishes are favorite at home and we enjoy making soups, stir fries, manchurian and rice dishes.

Among these dishes, fried rice is one recipe we make the most. It is such a versatile dish, you can pretty much add veggies of your choice, rice and toss them with a sauce and you are all done.

Making fried rice is also a great way of using up left over rice.

There are many variations to making fried rice. This Burnt Garlic Fried Rice is slightly unique and different in taste, because it is nutty and slightly bitter from the browned bits of garlic.

Enjoy this flavor packed rice by itself or pair it with manchurian, sweet and spicy tofu or curry.

This Burnt Garlic Veg Fried Rice

  • is bursting with flavor of browned garlic
  • is super quick to make
  • gets done in 20 minutes ( if you have left over rice)
  • is a easy weeknight dinner dish
  • can be served by itself or pair it with a stir fry

How to make Garlic Fried Rice (with step by step pics)-

1 & 2- Peel the garlic and finely chop them.

3 & 4 – In a large wok or a skillet, heat the oil in medium heat. Add the chopped garlic and saute till crisp and brown. Remove two teaspoons of the garlic and set a side.

5 – Add the green beans, carrot, bell pepper, and white part of the green onion.

6- Toss and cook stirring continuously until vegetables are cooked thoroughly, about 5 minutes.

7 – Add the cooked rice, reserved sauteed garlic, black pepper, soy sauce, vinegar, salt and sugar.

8- I also added some chili garlic sauce to the rice. Adding chili sauce is optional.

9- Mix well and cook it by stirring it occasionally so that the rice is hot and coated well with all the spices.

10- Serve the fried rice topped with green part of the spring onion and crispy fried garlic.

Burned Garlic Fried Rice

Burned Garlic Fried Rice is made with fried garlic,rice and colorful veggies giving tons of flavor. Delicious and gets done in 20 minutes.

Ingredients

  • 3 cups cooked rice ( long grain or basmati rice) left over rice or rice at room temperature
  • 6-8 medium garlic cloves, chopped
  • ½ cup finely chopped green beans
  • 1 medium carrot, finely chopped
  • 1 small bell pepper, finely chopped
  • 2 spring onion, white and the greens
  • 3 tsp vegetable oil
  • 1 tsp sesame oil
  • 2 tsp soy sauce or to taste
  • 1-2 tsp vinegar
  • ½ tsp black pepper, crushed
  • 1 tsp chili garlic sauce or any chili sauce
  • ¼ tsp sugar
  • salt to taste

Instructions

  • In a large wok or a skillet, heat the oil in medium heat. Add the chopped garlic and saute till crisp and brown. Remove two teaspoons of the garlic and set a side.
  • Add the green beans, carrot, bell pepper, and white part of the green onion.
  • Toss and cook stirring continuously until vegetables are cooked thoroughly, about 5 minutes.
  • Add the cooked rice, reserved sauteed garlic, black pepper, soy sauce, vinegar, salt and sugar.
  • I also added some chili garlic sauce to the rice. You can add any chili sauce or skip it for milder fried rice.
  •  Mix well and cook it by stirring it occasionally so that the rice is hot and coated well with all the spices.
  • Serve the fried rice topped with green part of the spring onion and crispy fried garlic.

Notes

  1. Do not saute the garlic till dark brown, it will become bitter.
  2. Make sure the rice is cooled and dry before making the fried rice. 
  3. If making the rice fresh, spread the rice in large plate and let it dry a bit. 
  4. Soy sauce, vinegar and pepper can be adjusted according to your taste.
  5. Chili sauce is optional, if you are serving the fried rice by itself definitely add it. But if you are serving with astir fry you can skip it.

      Hope you like it. 1 cup of cooked rice weighs about 200 gms, so you will need about 600 gms of cooked rice.

    Nicely conceived and presented in a way that gives readers most help. The tips, like not burning the garlic and using cold rice, are very useful- Veg Manchurian with this, I think!
