Thoran is a popular dry dish from the cuisine of Kerala. Cabbage Thoran is basically Cabbage stir fry which uses coconut, green chilly, onion and cumin seeds in them.
What makes this thoran different from a regular cabbage stir fry is the process in how the dish is made.

Kerala Style Cabbage Stir Fry
Thoran is a popular dry dish from the cuisine of Kerala. Cabbage Thoran is basically Cabbage stir fry which uses coconut, green chilly, onion and cumin seeds in them.

Ingredients
- 3 cups shredded cabbage
- 3 small green chili
- ¼ cup dry or fresh coconut
- ½ cup onion, finely chopped
- 1 teaspoon cumin seeds
- ½ teaspoon mustard seeds
- ¼ teaspoon turmeric powder
- ⅛ teaspoon asafatedia
- 8 curry leaves
- 1 ½ tablespoons coconut oil
- 2 tablespoons coriander leaves
- salt to taste
- lemon juice to taste
Instructions
- Wash and finely shred the cabbage. You can either use the food processor or a regular knife. Finely chop the onion( shallots), green chilly, curry leaves and coriander leaves.
- In a big bowl add the shredded cabbage, grated coconut, onion, green chili, turmeric powder, curry leaves, cumin seeds and salt.
- Mix well and let stay for ten minutes.
- Heat the coconut oil in a pan and add the mustard seeds. When mustard starts dancing around, add the hing and the cabbage mixture. Mix well. Close the lid and cook on a low flame, stirring every now and then till the cabbage gets soft.
- At the end of the cooking process make sure there is no moisture in the cabbage.
- Turn off the heat. Finally add in the coriander leaves and lemon juice. Mix well and serve with rice.
