Carrot Ladoo ( with coconut, nuts & dates)

Carrot Ladoo – a healthy spin to the traditional gajar halwa.

These carrot ladoo are made with grated carrot, coconut, nuts, dates and ghee.

Easy to make and naturally sweetened ladoo. If you are trying to keep it healthy during festive season, this is a perfect little treat to enjoy.

About this recipe

This recipe is inspired by Carrot Halwa, famously called as Gajar ka Halwa.

Gajar ka Halwa is made during winter months when fresh bright carrots are in market. It is a pudding made with grated carrot, milk, sugar and ghee.

I have used the same ingredients as we would put in the carrot halwa, but replaced white sugar with soft dates. I also added coconut and nuts to the ladoo which not only are nutritious but also helps in biding the ladoo easily.

Ingredients:

How to make Carrot Laddu?

Step by step photo instructions-

Grate the carrot using the larger side of the grater. Measure and 3 cups (tightly packed ) and set a side.

1 – Heat a large kadai (pan) and add the ghee. Once the ghee melts add the carrot and roast them in ghee for five minutes.

2 – Now add the milk, give a mix and cook covered for 15 minutes. Mix it often to avoid burnt bottom.  

3 & 4 – Cook till the carrot becomes soft and mushy. You can taste the carrot to see if it cooked well.

5 & 6 – While the carrot is cooking grind the dates, cashew and almonds to a powder. It doesn’t have to be completely powdered, having few large pieces of nuts is ok.

7 – Now add the desiccated coconut and cook for 2 minutes.

8 – Add the ground nuts and date mixture and cook on low fame for 8 minutes.

9 – Finally add the crushed cardamom and few chopped cashew.

10, 11 – Turn off the stove and transfer the mixture to a plate and spread it. Let it cool completely.

12 – Make medium sized round balls and coat them with desiccated coconut. We get 12 ladoo with this recipe.

Storage :

As these ladoo have milk in them, these need to be stored in the refrigerator. Stays fresh for up to 5 days!

Pro Tips :

Roast the carrot with ghee and cook it in milk, nice and slow. Do not rush.

Add cardamom towards the end to keep the beautiful aroma.

Use good quality soft dates.

Variations:

You can skip coconut and just add nuts or vice versa.

To make more rich tasting add mawa or milk powder and skip the coconut.

Ingredients

  • 3 cups tightly packed grated carrot

  • ¼ cup desiccated coconut
  • ¼ cup cashew
  • ¼ cup almonds
  • 15 soft dates or add to taste
  • 1 tbsp ghee
  • 4 cardamom pods, finely crushed
  • few cashew pieces for garnish (optional)

  • Finally add the crushed cardamom and few chopped cashew (optional).
  • Turn off the stove and transfer the mixture to a plate and spread it. Let it cool completely. Make medium sized round balls and coat them with desiccated coconut.

Notes

The amount of dates needed also depends on how sweet the carrot is.
After cooking if you feel the mixture is not sweet enough, you can add some sugar and cook till it melts completely.

    Hi Madhu, this looks great. Milk is in the method, but not in ingredients. Also the dates step is not in the method. Would love to make, but need more detail please.

      sorry…. I updated the amount of milk used.

      Regarding dates, in the step by step instructions – if you see the step 5 picture you can see that dates and nuts are in the mixer jar and I grind them in step 6.
