Cherry Tomato Salad:

2 cups Cherry Tomato (yellow or red or combination of both)
2 tbsps finely chopped red onion
2 tbsps finely chopped parsley or coriander leaves
For the Salad Dressing:
½ tbsp Olive oil
1 tbsp red wine vinegar
⅛th tsp ground black pepper
Salt to taste
In a small bowl, whisk together all the dressing ingredients and set a aside.
Halve the cherry tomatos and add the chopped onion and parsley.
Pour in the salad dressing and gently toss to combine all ingredients. Check for seasoning and serve.
