Chocolate Chia Seed Pudding with Coconut Milk

Chocolate Chia Seed Pudding with Coconut Milk is a healthy and decadent recipe which can be enjoyed for breakfast, snack or dessert. Its Vegan and gluten free too!

What are Chia Seeds?

Chia seeds are tiny black seeds from the desert plant Salvia hispanica, a flowering plant in the mint family. These tiny seeds are packed with many nutritional benefits.

Chia seeds are an excellent source of dietary fiber, omega 3 fatty acids and are packed with protein.

They can be eaten raw, make porridge or pudding, add to the smoothies or to your baked goodies.

This chocolate pudding made with chia seeds, will become your favorite way of enjoying chia seeds.

If you are enjoying it for breakfast, you can also add few teaspoons of coffee for that morning caffeine.

This Chocolate Chia Pudding is

Ingredients:

Coconut Milk – the liquid in the recipe

Maple Syrup – my go to sweetener, you can use any sweetener of your choice

Chia Seeds – the main ingredient in the recipe

How to make Chocolate Chia Seed Pudding with Coconut Milk –

1- In a large bowl add the coconut milk, water, maple syrup, vanilla extract, and cacao powder.

2- Using a whisk mix it until no lumps are seen.

3- Add the chia seeds and mix until well combined.

4- Set a side for 15 minutes.

5 – After 15 minutes, mix it well and taste for sweetness and adjust. If you feel the mixture is very thick, add little more coconut milk or water. Transfer it to the individual cups, cover it a cling wrap and place it in the refrigerator overnight or minimum of 5 hours.

Frequently Asked Questions –

How long will the Pudding last?

Chia Seed Pudding will last in the refrigerator for 4-5 days.

What can I substitute coconut milk with?

Any plant based milk of your choice will work. If you are not vegan, you can use regular milk.

What can I substitute maple syrup with?

Honey can be used.

Why did you add water?

Water is optional, but the coconut milk I used was thick. So added some water to thin it out.

  • ⅓ cup chia seeds
  • 3 – 5 tablespoon maple syrup
  • 2 cups coconut milk can be substitute with any plant based milk
  • ½ cup water see note
  • ¼ cup coco powder
  • ½ teaspoon vanilla extract
  • pinch of salt

Instructions

  • In a large bowl add the coconut milk, water, maple syrup, vanilla extract, and cacao powder. Using a whisk mix it until no lumps are seen.
  • Add the chia seeds and mix until well combined.  Set a side for 15 minutes

Notes

Coconut milk can be substituted with any plant based milk.
If using plant based milk, skip water and add more milk.
If the pudding is too thick to your liking, add more coconut milk. 
You can also add few teaspoons of coffee if enjoying for breakfast.

    Is it the same coconut milk that comes in cans and is often used in cooking Thai curries?

      yes…. that’s what I used, the canned one. You can also use fresh homemade thick coconut milk,
