Cucumber Carrot Raita | Raita Recipes

Typically the raita is made by combing onion, cucumber and tomato in yogurt. Its seasoned with mustard seeds and green chilly.  From your imagination or the ingredients you have, raita can be made in few different ways.This particular raita had the addition of grated carrot in it. I skipped the regular tempering and seasoned with just black pepper and salt.
  
Served this cucumber carrot raita with oats spinach paratha.
 
Cucumber Carrot Raita:
 
Ingredients:
 
  • Cucumber- 1
  • Red onion- ½
  • Tomato-1
  • Small carrot-1 grated
  • Yogurt / curd 2 cups
  • Salt to taste
  • Black pepper to taste
  • Coriander leaves to garnish

Procedure:

Chop the cucumber, onion and tomato. Add the grated carrot and yogurt. Add the salt, crushed black pepper and corainder leaves.Mix well and serve with roti or any rice dishes.
 
My note:
You can make it ahead and but Keep it in the refrigerator till you are ready to serve.
