Cucumber Raita with Coriander Mint Chutney

cucumber raita with coriander mint chutney recipe- Raita is a dip where different veggies are mixed in yogurt and flavored with some spices. The recipe i am sharing today is the basic Cucumber raita with Coriander mint chutney. Its a great side for any spiced rice dishes, Pulav, Biryani, and for chapathi.


Some main course recipe ideas that can be served with raita-

Vermicelli Pulav

Vegetable Pulav

Oats Palak Paratha

Ingredients:

  1. Medium Cucumber -1
  2. Tomato -1
  3. Red onion- ½ chopped fine
  4. Coriander mint chutney- 1 tsp (recipe follows)
  5. Yogurt/Curd as desired
  6. Salt to taste
  7. Coriander/Cilantro for garnish

Coriander mint chutney:

  1. Coriander leaves- ¼th cup
  2. Mint leaves- ¼th cup
  3. Green chilly – 2 ( reduce it for a mild chutney)
  4. Salt to taste

Combine the above ingredients with some water and grind to a smooth paste. The consistency of the chutney should be little thick.

Procedure:

Finely chop the cucumber, onion and tomato and place them in a bowl. Add the coriander mint chutney, yogurt and salt. Mix well and the raita is ready to be served.
