Egg Bhurji Sandwich | Indian Egg Sandwich

Egg Bhurji Sandwich is an Indian Style Scrambled Egg Sandwich.

Also called as Anda Bhurji, this Masala Bhurji Cheese Sandwich can be enjoyed for breakfast, snack or dinner.

About this recipe

Egg Bhurji is an Indian style scrambled egg made with eggs, onion, green chili, tomato and garam masala. Its tangy and sweet and spicy from the sauteed onion, tomato and chili sauce.

To make the Egg Bhurji Sandwich we add this egg filling to the bread and toast it till golden brown. You can make the sandwich either in a pan, toaster, grill pan or a sandwich maker.

How to make Egg Bhurji Sandwich?

To make Egg Bhurji –

1 & 2 – In a bowl add the eggs and whisk them.

3 – Heat a pan and add the oil. When the oil gets hot, add cumin seeds and let them splutter. Now add the finely chopped onion and green chili. Saute till brown. Add the minced ginger and cook for a minute. I also added some red bell pepper and cooked for two minutes.

4 – Now add the tomato and pinch of salt.

 1& 2 - eggs are added to a glass bowl and whisked, 3 & 4 - onion, green chili sauteed and tomato added to he sauteed onion

5 – Cook the tomato till mushy and thick, all the moisture from the tomato should be absorbed.

6 – Add the red chili powder, garam masala, black pepper and salt. Cook for 30 seconds.

7 – Add the whisked eggs to the onion masala.

8 – Gently fold the eggs and cook for few minutes. Do not overcook. Turn off the stove and add finely chopped coriander leaves and check for seasoning.

To make Sandwich –

9 – Spread some soft butter on both the bread slices. Add some grated cheese and 2-3 tablespoons of egg bhurji, cheese, chili sauce (optional) and cover with the other bread.

10 & 11 -Heat the grilled pan and apply butter on the bottom surface. Place the sandwich and cook till crisp and brown.

12 – Cut the sandwich to half and serve immediately.

Variations:

Don’t eat eggs – replace eggs with grated paneer.

Want more veggies – add finely chopped bell pepper.

Skip the egg and add boiled potato to make potato sandwich

You can skip the eggs, paneer and potato and make it just with onion, bell pepper and tomato. You can add corn too.

Equipment

Ingredients

  • 3 large eggs
  • 6 slices of bread ( white, wheat or multi grain bread)
  • 1 small finely chopped onion
  • ½ cup finely chopped bell pepper (optional)
  • 1 tomato, chopped
  • 1 green chili, finely chopped
  • 1 teaspoon ginger, minced
  • ½ teaspoon garam masala
  • ¼ teaspoon black pepper
  • ¼ teaspoon Kashmiri red chili powder (mild)
  • ½ tablespoon oil
  • handful of coriander leaves
  • salt to taste
  • soft butter to spread it on the bread
  • grated cheese as needed
  • ketchup or maggi hot and sweet chili sauce per taste

To make Egg Bhurji –

  • To make Egg Bhurji Sandwich –

  • Heat the grilled pan and apply butter on the bottom surface. Place the sandwich and apply some butter on the top. Cook till crisp and brown.
  •  Cut the sandwich to half and serve immediately. Makes 3 sandwiches.

Notes

Adjust the spices according to your taste.
