Indian Jackfruit Fry | Jackfruit Palya

Indian Jackfruit Fry – South Indian style, precisely Karnataka style fry made with tender jack fruit, mustard seeds, red chili, coconut and curry leaves.

Simple South Indian side dish, but great on flavors. Pairs well with rice and sambar. 

In Karnataka, Jackfruit Fry is also called as Halsina Kayi Playa or Jackfruit Palya. Some of the other Indian names for this fry are Kathal sabzi and Panasakaya Kura.

Ripe jackfruit is enjoyed as fruit, while the raw or unripe ones are used in many savory dishes.

Many vegetarians and vegans, often use jackfruit as a meat substitute, due to its chewy texture.

Raw jackfruit can be used to make stir fries, curry, tacos, sandwiches, chili, nachos and more.

How to make Karnataka Jackfruit Fry?

1 – Cut the jackfruit into long strips. Depending on how tender the jackfruit is you can use the flesh and the fruit. I just used the fruit. The ones we get in Indian stores are sold by pieces like shown in the picture. If the fruit is sticky, rub some oil in to your palms before cutting. Do not discard the seeds. They can be boiled with salt and enjoyed as a snack.

2 – To a blender add the mustard seeds, red chili, fresh coconut and coriander leaves. Blend until powdered. do not add any water. Set a side.

3 – To a skillet add oil and once the oil gets hot, add mustard seeds and let them pop. Now add urad dal, cumin seeds, dry red chili and fry until the dal gets light brown. Add garlic and saute for 30 – 45 seconds.

4 – Add jackfruit and turmeric to the tempered ingredients.

5 – Cook the jackfruit till soft, stirring often. It takes about 15 minutes depending on how ripe it is.

6- Add the ground spice mixture, coriander powder and salt.

7 – Mix it and cook for 5-7 minutes, uncovered. You can add some lemon juice and jaggery (optional, do not add if jackfruit is little sweet). Taste and adjust the salt.

Serving Suggestions:

Serve the Jackfruit Palya with rice, sambar, and pickle.

Frequently Asked Questions –

Where can I buy fresh jackfruit?

I got in Indian store. Some of the regular grocery stores in U.S carry it as well.

Can I use canned or frozen jackfruit instead?

Yes you can use it.

Can I skip mustard seeds in the ground mixture?

Ground Mustard adds so much flavor in this recipe. But if you don’t have you can skip it.

Can I use jackfruit which is completely ripe?

No, not in this recipe. It will be very sweet.

Ingredients

  • 2 ½ lb jackfruit pic above for reference
  • 3 cloves garlic, sliced
  • 1 sprig curry leaves
  • ½ teaspoon mustard seeds
  • 1 ½ teaspoon urad dal
  • 1 teaspoon cumin seeds
  • 1 red chili, broken
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 tbsp oil
  • little jaggery (if needed)
  • salt to taste

To grind –

  • 1 teaspoon mustard seeds
  • 3 – 4 dry red chili
  • 1 cup fresh grated coconut
  • 1 big handful of fresh coriander leaves

Instructions

  • Add the ground spice mixture, coriander powder, jaggery and salt. Mix it and cook for 5-7 minutes, uncovered. You can add some lemon juice. Taste and adjust the salt.

Notes

Pick the jackfruit which is not ripe, if not the palya will be too sweet. 
If the jackfruit is little sweet do not add jaggery.
