Easy Vegan Jackfruit Curry (Instant Pot)

This easy Vegan Jackfruit Curry is a creamy, hearty and delicious dish made with warm aromatic Indian spices.

An easy one pot dish that can be made in both instant pot and stove top. Ready in 30 minutes.

What is Jackfruit?

Jack fruit is a species of tree in the fig, mulberry and bread fruit family. It is a giant fruit which can be used in both savory and sweet dishes.

The ripe jack fruit can be enjoyed as a fruit and the unripe green jack fruit is often used in plant based dishes and is a good meat substitute.

Jack fruit is very neutral in taste, so it can easily take the flavors of the dish you are making. Today we will be making Indian Jackfruit curry with coconut milk, garam masala and few other spices.

Ingredients needed to make Vegan Jackfruit curry-

  • Jackfruit – young green jackfruit in brine ( available in trader joe’s or Asian and Indian stores)
  • Chick peas Or a Potato
  • Coconut milk
  • Onion, ginger, garlic, tomato puree
  • Spices like garam masala, red chili powder, coriander powder
  • Coriander leaves

Procedure to make Instant Pot Jackfruit Curry –

Remove the green jack fruit from the can, rinse it well and drain it. Cut the jackfruit to smaller pieces or shred them with your hand.

1-Select the saute mode on the instant pot and heat the oil. Now add the cumin seeds and fry for 30 seconds. Add the onion and cook for 4-5 minutes until the onion turns soft. you can splash with little water while cooking, to avoid burning.

2- Add ginger garlic paste and saute for 45 seconds. Add the turmeric powder, red chili powder, corinader powder and salt. Cook for a minute.

3 & 4- Add the jackfruit and coat them with all the spices and cook for minute.

5- Add the pureed tomato, coconut milk and cooked chickpeas or cubed potato.

6- Mix everything, making sure you deglaze the pot.

7- Press cancel, secure the lid and adjust the vent to sealling position. cook on high for 6 minutes.

8- After 10 minutes, release the pressure by moving the knob from sealing to vent. The curry will be watery, mix it well and brake up some of the jackfruit. Sauté for 2-3 minutes till the curry thickens slightly. Just keep in mind that curry thickens further on cooling. Taste and adjust the seasoning. Finally add little sugar, lemon juice and fresh coriander leaves.

Serve the Jackfruit curry with steamed rice and salad.

Where can I buy Jackfruit?

Canned Jackfruit is available online and also in some grocery stores like Trader Joes. It is also available in Asian stores and selected Indian stores.

Yes, jackfruit is a healthy vegan meat replacement because of its texture.

With the mild neutral flavor, jackfruit takes in the flavor of what ever seasoning you are adding in.

Instant Pot Jackfruit Curry

Ingredients

  • 1 10 oz green jackfruit (in water or brine)
  • 1 large onion, diced
  • 2 medium tomato, pureed
  • 1 medium potato or ¾ cup cooked chickpeas ( use which ever you prefer)
  • ½ inch piece ginger, grated and minced
  • 3 cloves of garlic, minced
  • 1 cup coconut milk, full fat
  • 1 tbsp oil
  • ½ tsp cumin seeds
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp red chili powder or to taste
  • ½ – 1 tsp garam masala
  • ¼- ½ tsp sugar ( or brown sugar) to balance the acidity from the tomato
  • ½ cup water
  • salt to taste
  • lemon juice to taste
  • a handful of chopped coriander leaves

Instructions

Instant Pot Method-

  • Add ginger garlic paste and saute for 45 seconds. Add the turmeric powder, red chili powder, coriander powder and salt. cook for a minute. Add the jackfruit and coat them with all the spices and cook for minute.
  • Add the pureed tomato, coconut milk and cooked chickpeas or cubed potato. Mix everything, making sure you deglaze the pot.
  • Press cancel, secure the lid and adjust the vent to sealing position. cook on high for 6 minutes.
  • After 10 minutes, release the pressure by moving the knob from sealing to vent. The curry will be watery, mix it well and brake up some of the jackfruit and saute for 2-3 minutes till the curry thickens slightly. Just keep in mind that curry thickens further on cooling. Taste and adjust the seasoning, add little sugar, lemon juice and fresh coriander leaves.
  • Let the curry rest for an hour for the flavors to develop and serve with basmati rice or flat bread.

Stove Top Method-

  • In a deep skillet heat oil and add the cumin seeds. Saute for 30 seconds.
  • Add in the onion and cook for 4-5 minutes till onion turns soft and light brown.
  • Add chopped ginger and garlic and saute for a minute. Add all the spices and salt and cook for 30 seconds.
  • Add the jackfruit and coat it with spices and cook for 3-4 minutes. If you are using potato, add in the potato as well. Do cut them to small pieces for fasten the cooking process.
  • Add the tomato puree and quarter cup of water and mix well.
  • Simmer the curry for 10 – 15 minutes till the jackfruit is soft and tender to touch.
  • Add the coconut milk and simmer for another 10 minutes or until you get the desired consistency of the curry. If you skipped potato and adding chickpeas, add them now.
  • Finally add some sugar, lemon juice (not too much) and coriander leaves for garnish.
  • Let the curry rest for few minutes for the flavors to develop and serve with basmati rice or flat bread.

Notes

Use either potato or cooked chickpeas in the curry. The starch in them helps the curry to thicken and make it creamy.
