Instant Pot Tindora Fry – This Tindora Sabzi with coconut is a simple stir fry served as a side dish with rice and roti. Sharing the easy instant pot method of making this tindora fry.
Ivy Gourd is the English name for tindora. In India tindora is also refereed as dondakaya, tondekayi, kovakkai or tendil. In Andhra we call is Dondakaya vepudu.
Indian cuisine has many vegetarian and vegan dishes which are amazing in taste and flavor. Though in the west, Indian cuisine is popular for its gravy based curries, stir fried vegetable dishes are equally popular in India.
Tindora is one such vegetable which is popular for its stir fries. Sharing the instant pot method of making tindora fry, where tindora is cooked to perfection with out much effort and time.
How to make Instant Pot Tindora Stir Fry with Coconut:
Wash the tindora and cut the edges. Cut the tindora vertically and chop them. Repeat with rest of the tindora.
Step 1 & 2 – Add ⅓ rd cup fresh coconut, two garlic cloves and a handful of coriander leaves in mortar pestle and make a coarse paste.
Step 3 – Turn on the instant pot on saute mode and add a table spoons of oil. When the oil gets hot, add half teaspoon of mustard seeds. Let them pop and then add chana dal and cumin seeds. Once the cumin sizzles, add the chopped onion and cook for two to three minutes till onion gets soft. If the pot is browning while cooking onions, add splashes of water to avoid burning
Step 4 – Add the chopped tindora, coconut coriander mixture,turmeric powder, red chili powder, garam masala and salt.
Step 5 & 6 – Mix all the ingredients and saute for a minute. Add ¾th cup of water and mix well making sure nothing is stuck to the bottom of the pan. ( otherwise you will get a burn sign)
Step 7 – Cancel the saute mode, close the lid and adjust the vent to the sealing position. Press the manual or pressure cooker mode and adjust the time to 7 minutes on high pressure.
Step 8- Once the cooking time is done, release pressure after five minutes. Add quarter tea spoon of sugar (optional) and mix the sabzi. Saute the tindora fry for a minute or two till all the excess water is absorbed. Tindora dry curry is ready to be served.
Serving Suggestions:
Tindora Fry can be served with chapathi, roti or a plain paratha. You can also pair this dondakaya fry with rice, dal, rasam and sambar.

Ingredients
- 3 cups chopped tindora
- 1 large onion, chopped
- 2 garlic cloves
- ⅓ cup fresh coconut, grated
- big handful of coriander leaves
- ½ tsp turmeric powder
- ½ to 1 tsp red chili powder
- 1 tsp garam masala
- ¼ tsp sugar
- ½ tsp mustard seeds
- 1 tsp chana dal optional
- ½ tsp cumin seeds
- salt to taste
- 1 to 2 tsp lemon juice
- 1 tbsp oil
Instructions
Cutting the Tindora –

Notes
- If fresh coconut is not available, dry coconut can also be used.
- Frozen tindora can also be used in the recipe. If using frozen tindora, once the cooking is done wait till the pressure releases naturally before opening the lid.
