Khas Khas ka Halwa is a very rich tasting sweet, but the procedure is quite easy to make. The texture of the halwa is quite similar to khoya and kalkand. Unlike the other halwas which are smooth, khus khus ka hlawa is more grainy in texture.
Poppy seeds halwa may not be that popular when compared to other halwas. But there are few regions of India which make this halwa. In North, its popularly called as khas khas ka halwa, khus khus jo seero and khuskhus halwa. In the south its called Gasa Gase Halwa in Karnataka, Gasagasalu Halwa (in Andhra & Telangana).This halwa is also called Murshidabad style halwa, popular during the nawabs time.
Poppy seeds contain iron and phosphorous, which are essential for bone maintenance. Eating poppy seeds at night, also helps to relax and aid in better sleep.
Khus Khus halwa is also served to the new mothers. It provides strength and vital nutrients to the mother and the baby.
Ingredients:
Poppy Seeds Halwa (Step by Step Method)
1- Wash the poppy seeds by rubbing it. Repeat 2 -3 times and soak the poppy seeds for atleast three hours. After three hours, rinse it again and drain the water.
2- Transfer the soaked poppy seeds in to a blender. Add little water and make a coarse paste. Do not make smooth paste, it should be slightly coarse.
3- Heat a wide pan and add two teaspoon of ghee and let it melt. Now add the poppy seeds paste and milk and mix it well with out any lumps.
4- Cook it for 10 minutes in medium flame, mixing often.
5- Now add the sugar and cook till most of the moisture is evaporated. It will take about 15 -18 minutes in medium to high flame.
6- Add two teaspoons of ghee and cook for couple more minutes till the halwa leaves the pan. Turn off the stove when the halwa is slightly moist, this is important as halwa will thicken as it cools.
7- To a small pan add two teaspoons of ghee and the nuts and fry till light golden.
8- Add crushed cardamom and pan fried nuts. Mix and enjoy the halwa.
