Maida Ponganalu recipe – Ponganalu is a easy and tasty deep fried snack recipe made with three different flours, green chily, onion and curd. Serve with peanut chutney and tea/coffee.
Ponganalu is a traditional evening snack prepared in Andhra Pradesh. Generally left over dosa or idli batter is used in making these ponganalu.
Today I used maida ( all purpose flour), rava and rice flour. These are combined with onion, green chilly, plain yogurt (curd) and coriander leaves to form a thick dough. The dough is deep fried to golden brown.
Serve the maida ponganalu with peanut chutney. Though you can serve with any other chutney like carrot capsicum chutney, I think these tastes very good with peanut chutney.

Maida Ponganalu:
Ingredients:
- All purpose flour (Maida) – ¾ th cup
- Rava / semolina – ¼ th cup
- Rice flour- ¼ th cup
- Large Onion- 1
- Few Coriander leaves
- Green chilly- 4 or as desired
- Sour curd – ½ cup
- Few Curry leaves
- salt to taste
- Water as needed.
- Finely chop the onion, green chilly, coriander leaves and the curry leaves. Place them in a bowl.
- Add all purpose flour, rava, rice flour, curd and necesssary salt to the chopped ingredients.
- Mix well.
- Now slowly add the water little at a time to get a slightly thick batter.
- Heat oil for deep frying. when the oil gets hot, put small droplets of the dough in the and oil.
- Fry the Ponganalu in medium flame, and cook till light brown on the outside.
- Serve hot with chutney of your choice.
- Enjoy the maida Ponganalu with a cup of tea or coffee.
