Ingredients:

french fries in air fryer indian ingredients

Potato: I like to used Russet Potatoes as they are denser and have low moisture content.

Seasoning: I used Kashmiri red chili powder, garlic powder, black pepper, and chaat masala.

Oil: I used avocado oil, vegetable oil or olive oil can also be used.

Corn Starch: just a little to bind and makes the fries crispy. Do not get tempted to add more, it will spoil the taste of the fries.

How to make Easy Air Fryer Masala Fries:

Scrub and wash the potatoes well. You can keep the skin or peel them. While I love the texture with the skin on, I peeled them as my kids like it this way.

Cut them to ¼th inch stick and add them to a large bowl of water. Mix them lightly so they release some starch. Drain the water, add more water and soak the potatoes for 20 minutes.

After 20 minutes drain all the water and transfer the potatoes to a clean kitchen towel. Wipe them till they are completely dry.

Preheat the Air Fryer to 380 F for 3 minutes. Transfer the dried potatoes to a clean bowl and add one teaspoon of corn starch, one teaspoon salt, black pepper to taste, one teaspoon Kashmiri red chili powder and one teaspoon garlic powder.

potatoes cut, soaked and drained and spices are added

Using clean hands mix , mix till all the potatoes are coated with spices.

Now add oil and gently toss again.

Add them to the air fryer in single layer, do not over crowd. I made the fries in two batches. Air Fry at 380F ( 190 C ) for 18-20 minutes, shake the basket half way through. Check around 15 minute point, to see if the fries are done. The timing may slightly vary depending on the thickness of the potatoes. If you like it crispy, cook for couple more minutes.

Remove the fries add ¼th teaspoon chaat masala and finely chopped coriander leaves. Taste and if needed adjust salt. Serve immediately to maintain the crunch.

If making in batches, keep the fries warm in preheated oven at 200F while the other batch is getting cooked.

Tips:

  1. Use Russet Potatoes which are best for French Fries.
  2. If keeping the skin, clean the potatoes well to remove any dirt.
  3. Cut the fries to even thickness and length, so they cook properly at the same time.
  4. Soak the potatoes in water for 15 to 20 minutes which helps to remove excess starch.
  5. After soaking pat them dry to remove the moisture.
  6. Do not get tempted to add more corn starch than recommended, it will spoil the taste of the fries. But if don’t like adding corn starch, you can omit it. Corn starch will help the fries get little crispy.
  7. Do not over crowd the basket, cook them in a single layer.
  8. Shake the basket half way through the cooking process for even browning.
  9. Serve immediately. If making couple of batches keep them warm in a preheated oven at 200 F.

Notes

Corn starch is optional, but helps to get slightly crispy potato.
I used Kashmiri red chili powder which is mild, but if you like it spicy add regular red chili powder but reduce the amount.
The amount of time it takes to cook will slightly vary depending on the air fryer and the thickness of the potato.
I use Cosori Air Fryer.
