Peanut Sundal/Usili

peanut sundal as neivedyam for navratri

 Peanut Sundal (Verusenaga pappu Sundal/Kadlekayi Usili)    

Recipe:

  • Raw peanuts- 1 cup
  • Green chilly – 2 slit
  • Few curry leaves
  • Grated Coconut – 2 tsp
  • lemon juice to taste
  • Salt to taste and
  • Tempering ingredients

Soak Peanuts in plenty of water for 3 hrs. Add half tsp of salt and pressure cook the peanuts till soft. Drain the water.  

In a pan add tsp of oil, followed by ½ tsp of mustard seeds. When the mustard starts popping, add ½ tsp each of chana dal and cumin seeds. Fry for few seconds, then add two pinches of hing and curry leaves.

Then add the cooked peanuts, followed by grated cocnut, lemon juice and necessary salt. Mix and cook for another five minutes. Turn off the heat.

Serve as Neivedyam. This is a very good protein rich evening snack as well.
