Paneer Sandwich (with spicy mayo & coriander chutney)

Paneer Sandwich – Indian style sandwich made with paneer, coriander chutney, spicy mayo and cheese. You will love this variation of the paneer sandwich which can be enjoyed for brunch or snack.

You will love this recipe

which has four different layers of flavors.

1- sauteed paneer with onion, bell pepper and spices

2- freshly homemade spicy coriander chutney

3- sweet, spicy and creamy mayonnaise

4 – grated cheese

All these layers are slabbed between crusty bread ( like sour dough) and grilled till crisp, golden brown and the cheese is melted.

This sandwich is one of my kids favorite evening snacks and I make it very often.

Here are few more of my kids favorite after school snacks – 7 layer bean dip, cheese and garlic pull apart bread, vegan pot stickers, and masala corn toasts.

Ingredients:

Paneer Filling – paneer, onion, bell pepper, ginger, garlic and spices go into this filling

Coriander Chutney – fresh home made chutney is highly recommended. But if not available store bought chutney will work too.

Spicy Mayo – maggi sweet and spicy chili sauce is combined with mayonnaise.

Bread – I used sour dough bread, but any crusty bread will work. Do not use soft bread.

Cheese – any of your favorite cheese will work.

How to make Paneer Sandwich –

Spicy Mayo –

Combine the maggi sweet and spicy chili sauce with mayonnaise and set a side.

Coriander Chutney –

Add coriander, green chili, dry coconut, ginger,garlic, cumin, salt, lime juice, and little water. Blend until smooth.

Paneer Filling –

1 – Prep all the ingredients and set a side.

2- Heat a skillet and add oil. Once the oil gets hot add thinly sliced onion and saute for a minute. Now add the ginger and garlic and saute for a minute.

3- Add sliced red bell pepper and pinch of salt and cook till pepper turns soft, about 7-8 minutes.

4 – Add the red chili powder, coriander powder, garam masala and salt. Saute for 30 seconds.

5 & 6- Now add paneer ( make sure the paneer is cut to small pieces) and gently toss everything. If the mixture feels dry, splash some water and cook for 5 minutes. Taste and adjust the salt.

Making the Paneer Sandwich on tawa or grill –

7 – Take two slices of bread, to one of them spread the coriander chutney and for the other spread spicy mayo.

8 – Add paneer filling on top of the bread which has coriander chutney.

9 – Add cheese on top the paneer filling and cover it with the other bread.

10- Spread some butter on top of the bread. Now place the buttered side of the bread on the bottom of the pan. Now spread butter on top of the other bread.

11 & 12 – You can either use a tawa ( pan) or a grill to cook these sandwiches. Cook them till crispy, golden brown and the cheese melts.

Frequently Asked Questions:

What kind of bread to use?

Any crusty bread will work. I used sour dough bread.

What can I replace maggi sweet and spicy chili sauce with ?

You can use sriracha sauce, but the sauce will not have hint of sweetness.

Can I use store bought coriander chutney?

Yes, you may. But the homemade one really adds so much flavor.

Ingredients

Spicy Mayo

  • ¼ cup mayonnaise
  • 2 tablespoons Maggi sweet and spicy chili sauce

Coriander Chutney

  • 1 bunch  coriander leaves, washed and roughly chopped
  • 1 tablespoon dry coconut
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger
  • 2 garlic cloves
  • 2- 3 small green chili
  • salt to taste
  • 1- 2 teaspoon lemon juice
  • water as needed

Paneer Filling

  • 1 cup paneer ( cut to small bite size pieces)
  • 1 medium onion, thinly sliced
  • 1 medium bell pepper ( I used red bell pepper)
  • 1 inch ginger, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon Kashmiri red chili powder (mild)
  • salt to taste
  • 1 tablespoon oil
  • soft butter ( to spread on the bread)
  • grated cheese as needed can use cheddar or sliced amul cheese from Indian store

Instructions

  • Combine the maggi sweet and spicy chili sauce with mayonnaise and set a side.

MAKING THE PANEER SANDWICH ON TAWA OR GRILL –

  •  Take two slices of bread, to one of them spread the coriander chutney and for the other bread spread it with spicy mayo.
  •  Add paneer filling on top of the bread which has coriander chutney.
  • Add cheese on top the paneer filling and cover it with the other bread.
  • Spread some soft butter on top of the bread. Now place the buttered side of the bread on the bottom of the pan. Spread butter on the bread facing the top.
  • You can either use a tawa ( pan) or a grill to cook these sandwiches. Cook them till crispy, golden brown and the cheese is melted.

Notes

These sandwiches tastes best when right out the grill. 
For meal prep- make chutney, spicy mayo and paneer filling in advance. Grilled the sandwich when you are ready to serve.
To reheat – you can warm it up in the toaster oven or a pan.
