Pistachio Cashew Energy Balls –

These pistachio cashew energy balls are easy, delicious and filling  and are made of just three ingredients. These energy balls are a great snack with out the guilt for those mid day cravings. T

hese are free of any refined sugars, and its sweetened naturally with soft dates. For variation, you can also add chia seeds, flax seeds or any other nuts to the recipe.

Soft dates work best for this recipe. But if you don’t have soft dates, just soak the dates in hot water for ten minutes. Soaking in hot water will help the dates to get soften and will help with binding the balls together.

As the name suggest these little balls are truly packed with all the goodness of  vitamins, antioxidants, good fat, protein and omega 3 fatty acids. Its a great energy booster after a work out, and for the afternoon hungry pangs.

A healthy afternoon school snack for kids. Let them gobble up few with a cup of milk, and they are ready for the other activities for the rest of the evening.

This is a favorite among the kids because of the chocolate chips in them. do try it with your little ones – no bake oatmeal energy balls , 

Also try the indian style energy ball, there is a hint of aromatic cardamom in the recipe. – dry fruits modak . 

These energy balls can be given with kids lunch or as kids snack in the evening.

Pistachio Cashew Energy Balls

Ingredients

  • Pistachio-½ cup

  • Cashew-½ cup

  • Pitted soft dates-  12 (or more depending on how sweet you like it)

Instructions

  • lightly roast the nuts in a pan and cool them completely.
  • Place all the ingredients in a food processor or a blender. Pulse few times until the mixture comes together.

  • Remove and make small balls. Refrigerate for atleast 15 mins and enjoy!
