I love to experiment with my veggies. This particular dish is the traditional Potato fry (with added veggies) which we make for Dosa. I prefer adding some other veggies while using Potato because of the high content of starch in them. Long back I added bell pepper and green peas to my Potato fry. It was an instant hit with my family. From then this combination has been a regular at my home . Here goes the recipe-
- Medium White potato ( or any kind)- 4
- Green bell pepper- 1 chopped
- Green peas- 1 cup ( I used frozen)
- Medium onion – 1 chopped
- Green chilly- 4 finely chopped
- Few curry leaves
- Salt to taste
- Lemon juice to taste
- Few coriander leaves for garnish
- And tempering ingredients
Boil potato till fork tender and keep on the side.
Take a pan add 4 tsps of oil. When the oil gets hot add a tsp of mustard seeds. When the mustard starts popping add a tsp of chana dal, 1/2 tsp each of urad dal and cumin seeds. Fry for few seconds.
Add the green chilly and curry leaves. Then add the chopped onion, turmeric and some salt. Cook for five minutes, til onion gets little soft.
Now add the bell pepper and green peas. Mix and close the lid. Cook for few minutes till all the veggies get soft.
Add the cooked cubed potato with the skin on. Slightly mash with the back of the spoon. Finally add the lemon juice, salt and tiny bit of water. Cook for another five minutes and tun off the heat.
Enjoy the potato bell pepper peas fry with dosa, chapati or as a sandwich filler.
