Potato Loquat Curry

Simple and delicious curry made with potato and loquat. It’s an Indian style vegan and gluten free curry.

Serve this potato loquat curry with cumin rice, plain rice or roti (Indian flat bread).

Loquat is a fruit native to china and is also known as Chinese Plum. Oval in shape with a pale yellow skin, loquat is a sweet and slightly tangy fruit.

I paired loquat with potato, onion, ginger and garlic and spices and made a curry which was incredibly tasty and delicious. It was something new and we enjoyed it with rice and roti.

How to make Loquat Potato curry (step by step pics)

1 – Peel the potato, cut them to small cubes. Cutting them small will help in the cooking process. Wash the loquat, peel the skin and remove the seeds.

2 – Heat a pan, add oil and cumin seeds. Once the cumin sizzles, add the chopped onion and a pinch of salt. Cook for 2-3 minutes. Add the chopped ginger and garlic and saute for a minute.

3 – Now add the cubed potato and half cup of water and cook for ten minutes till potato is half way cooked. Mix occasionally and add more water if needed.

4 – Now add the garam masala, red chili powder and tomato. Cook for two minutes, until tomato becomes soft.

5 – Add the green peas, loquat,salt to the potato mixture..

6- Add 1 to 1.5 cups of water and mix it well. Simmer the curry till potato is soft and the curry becomes little thick

7 – Add and fresh coriander leaves and a squeeze of lemon . Taste and adjust the seasoning.

Substitutions for this recipe-

No Loquat? you can just skip it.

No garam masala? use any good quality curry powder

Substitution for green peas? Use lima beans, black eyed peas or edamame.

Ingredients

  • ½ cup green peas I used frozen

  • 1 tsp garam masala or curry powder
  • ½ tsp red chili powder
  • 1 tsp cumin seeds
  • salt to taste
  • lemon juice to taste
  • 3 tsps oil
  • fresh coriander leaves for garnish
  • 2 to 3 cups water depends on how thick you like the curry
