Punugulu video recipe-
Punugulu is a popular evening snack from the state of Andhra Pradesh. It is made with left over dosa batter, onion, green chili, ginger and coriander leaves. While punugulu can also be made with Idli batter, I prefer using dosa batter.
Punugulu can be served with Peanut Chutney or Coriander Coconut Chutney and a cup of hot chai or coffee.
It is also a great way of using up left over dosa batter. If you are not up for frying, try this Gunta Ponganalu its pretty much the same recipe but made in a Paniyaram pan.

Ingredients
- 2 cups left over dosa batter
- 3-4 teaspoons rice flour (start with 3 teaspoons and add more if needed)
- 1 teaspoon cumin seeds
- 4 green chili, finely chopped
- 1 medium onion, finely chopped
- 1 teaspoon ginger (chopped or grated)
- 2 teaspoons grated carrot (optional)
- 1 tablespoon coriander leaves, finely chopped
- 1 sprig curry leaves, chopped
- salt to taste
- oil for deep frying
Instructions
- In a large bowl add the dosa batter, onion, green chili, ginger, cumin seeds, carrot, curry leaves, coriander leaves and salt. Mix it well.
- Now add 2 to 3 teaspoons of rice flour and mix it. The batter should neither be too thick or thin. Add more rice flour if needed.
- Heat oil for deep frying. When the oil gets hot, reduce the heat to medium and drop in spoonfuls of the batter. Do not over crowd the pan.
- Soon the pungulu will float to the top.
- Cook on both sides till golden.
- Remove and enjoy them immediately.
