Semiya Upma with peas- Lunch box Ideas

Packing lunch bags for the kids can be challenging at times. Most of our kids go to school even before the sun is barely out, so they hardly eat anything in the morning. So lunch becomes the important meal of the day. Given the time frame, its got to be easy for them to handle and to eat. At the same time as a mom we would like to give a balanced meal which will keep them going till they get back home.
 
From my past experiences i have realized that my daughter ate better when i gave her just one thing (rather than couple of different things). I would also include a fruit which she has no issue eating.  She loves fruits! 
 
I hope Lunch box ideas will give some ideas for mom’s like me with their morning blues . Please feel free to share your ideas as well . Would love to hear from you!
 

Recipe:

Ingredients:

  • Semiya / Vermicelli – 1 Cup
  • Medium carrot- 1 ( grated)
  • Frozen peas – ½ cup
  • Medium onion- 1 chopped
  • Green chilly- 2 ( cut to small pieces)
  • water- 1 ¼th cup
  • Salt and lemon juice to taste

Procedure:

Dry roast the semiya till light brown . ( about five to ten minutes)

In a non stick pan add two tsps of oil followed by mustard seeds, ½ tsp of chana dal. Fry for few seconds. Then add the green chilly and onions. Fry for another five minutes, then add the green peas and some salt. Close the lid and cook till the peas turns soft. At this point add the grated carrot. Cook for another five minutes.

Add 1 ¼ cup of water and let the water come to a boil. Add the roasted semiya. Mix, reduce the heat and cover the lid. Upma will be done in five more minutes. Add lemon juice and check for the seasoning.  Its ready to go to the lunch box.

    hi madhu, you mentioned onions in the procedure but u didnt mention the quantity in the ingredients list
