Sesame Almond Burfi is made with roasted sesame seeds, store bought almond flour and jaggery. A perfect winter and Makara Sankrathi sweet to enjoy with friends and family.

Sesame is called til in North India and Nuvvulu in Telugu. Sweets made of Sesame are enjoyed in India during winter months. Sesame is loaded with copper, iron, fiber and are rich in calcium and healthy fats which help us stay warm and healthy in winter months.
Some of the popular sweets made with Sesame are Chikki, ladoo and burfi. Here is my recipe for Sesame Burfi.
Ingredients:
- Roasted Sesame Seeds
- Almond Flour
- Jaggery
- Ghee and Cardamom
How to make Sesame Almond Burfi:
1- Grease a square pan with ghee and set a side. Roast the sesame for 7-10 minutes in medium flame till it lightly changes color. Do not make brown or over roast them. The sesame will start to sizzle in the pan and turn aromatic. Transfer it to a bowl and let the sesame cool completely.
2- Transfer the cooled sesame seeds to a blender and coarsely grind them.
3- Transfer the mixture to a large bowl and add 1 cup of almond flour and 3 crushed cardamom pods. Mix it well.
4- To a wide pan add 1 cup of jaggery ( or add 1 ¼ cup if you like it sweet) and ¼ cup water.
5- In medium flame, let the jaggery melt completely. When you start seeing tiny bubble keep a timer for 2 minutes and cook the jaggery syrup.
6- After two minutes you will see that the jaggery syrup is bubbling, now reduce the heat to low and add 2 teaspoons of ghee. Mix it and and immediately add the sesame almond mixture.
7- Keep mixing till the mixture comes together like shown in the picture.
8 – Grease a pan with ghee and transfer the mixture to the pan and press down the dough with a spatula .
9-Add slivered almonds and pistachio and gently press them so they stick to the burfi. After 10 minutes of cooling cut them to pieces and let cool completely before enjoying them.
10 – Stays fresh for a week or up to two weeks in the refrigerator.
Tips and Notes:
Do not over roast the sesame if not they will taste bitter.
We just need to boil the jaggery syrup till you see bubbles, no need for one string consistency.
While grinding sesame, pulse it few times to get a coarse powder, do not make fine powder.

Ghee adds a wonderful aroma and shine to the burfi, but it can be skipped.

Hi, can I use brown sugar instead of jaggery?

I am not sure if brown sugar will work as I have not made these burfi with it. In this recipe the Jaggery needs to be boiled for a certain time which will help bind the dough and then we can cut the buri into perfect squares. if you do try it with brown sugar please let me know, it will help the other readers.
