Sooji Halwa with Jaggery

Sooji Halwa with Jaggery – a traditional Indian dessert made with suji , jaggery and ghee. One of the populous and easiest desserts made for festivals and celebrations.

It is also called as Suji aur Gur ka Halwa.

  • which requires only a handful of ingredients
  • here sugar is replaced with jaggery which is rich in iron
  • it takes just 20 minutes to make the halwa
  • can be made as prasadam for festivals like Navratri, Ugadi or Diwali

Ingredients:

Semolina- called as suji or rava in India. We will be using the regular semolina, not the fine variety.

Jaggery – pick jaggery which is slightly dark ( it is less processed).

Step by Step Method –

1 – Heat one teaspoon of ghee and add chopped cashew and almonds. Saute till light golden. Remove and set a side.

2 – Add the rest of the ghee and semolina to the pan and roast the rava.

3- Roast the rava in medium flame till it slightly changes color and you can feel nice aroma.

4- While the rava is roasting – in a pan add water and jaggery and simmer it for 7-10 minutes.

5 & 6 – We need to roast the rava and boil the water jaggery mixture parallelly. Rava needs to be hot when we add the boiling jaggery water to it.

7 & 8 – Reduce the heat to low in the suji pan and slowly add the jaggery water little by little. Keep mixing to avoid lumps.

9 – Adjust the heat to medium, close the lid and cook the halwa till it slightly thickens and cooked through. If you feel the suji needs to cook little more, add some hot water and cook for few more minutes.

10 & 11 – Finally add fried cashew and crushed cardamom.

12- Mix it well and enjoy the halwa warm.

Frequently Asked Questions:

What kind of suji to use?

Use regular suji not the fine variety.

What kind of jaggery to use?

Use dark color jaggery, I used powdered dark jaggery.

How to keep the halwa from becoming a lump?

Roast the rava well and add hot jaggery water when the rava is still hot. Also add the right amount of ghee as mentioned in the recipe.

Ingredients

  • ½ cup semolina ( suji or rava)

  • 1 tablespoon almond pieces
  • 4 cardamom pods, crushed
  • 1 ¾ cup water

  • Finally add fried cashew and crushed cardamom. Mix it well and enjoy the halwa warm.

Notes

We need to roast the rava and boil the water sugar mixture parallelly. Rava needs to be hot when we add to the boiling jaggery water.
Adjust the amount of jaggery depending on how sweet you like it.
