Button Mushroom- about 12
Small yellow Bell pepper (any color is ok) – 1 ( chopped finely)
Onion – 1/2 chopped finely
Olive oil – 2 tbsps
Any kind of low fat grated cheese- 1 tbsp
A slice of whole wheat bread toasted and powdered
A good pinch of red pepper flakes
Italian seasoning to taste
Salt and black pepper to taste
lemon juice to taste
Choped parsely/coriander leaves – 1 tbsp
Remove the stems from the mushroom. In a pan add a tbsp of Olive oil. When it gets hot add the chopped onion and bell pepper. Cook till the vegetable gets little tender and soft. Add the red pepper flakes, Italian seasoning, black pepper,salt, bread crumbs and lemon juice. Cook for a minute. Turn off the heat and add the grated cheese and the parsely/coriander leaves. Mix.
Spoon the mixture evenly and generously on the mushroom caps.
If doing on a stove top – Take a large non stick pan, add a tbsp of Olive oil. When it gets hot place the mushroom caps and close the lid. Cook on medium heat for ten to fifteen minutes. Let stay for five more minutes before serving.
If doing in a oven – Preheat the oven to 400 F. Place the mushroom caps on ungreased baking sheet. Bake for 15 minutes.
