Ingredients:
- All purpose flour/ Maida- 1 ½cups
- Mango pulp / mango puree – 1 ½ cups ( fresh or canned)
- Sugar- ⅔ cup* (read the note)
- Oil- ⅓ rd cup
- Baking powder-2 tsps
- Baking soda- ½ tsp
- Cardamom powder – ½ tsp
- Vanilla extract – 1 tsp
- Salt – ½ tsp
Procedure:
Preheat the oven to 350F / 180C.
Grease an 8 or a 9″ round cake pan with oil and set a side.
Sift the flour, salt, baking powder, baking soda and cardamom powder. Set a side.
Mix together the mango puree, sugar oil and vanilla extract. Whisk until smooth.
Slowly incorporate flour mixture to the mango mixture and gently fold it until no lumps are seen.
Pour the batter in the prepared pan and bake for 30 to 35 minutes until a tooth pick inserted in the center of the cake comes out clean.
Cool the cake for 15 minutes and transfer it to a wire rack to cool completely.
Serve Mango cake as is or top it with Mango puree.
Note :
* If using Canned Mango puree like Alphonso brand, use slightly less sugar ( you can cut down atleast 1 tsp).
Canned mango puree tends to be lot more sweeter than the fresh ones.
If using fresh mango, taste the mango and adjust the sugar accordingly.

Thanks Siree. I made this cake a while back. We use oats regularly at home. I mostly use it to make savory dishes. Some how I don’t prefer sweet things with oats. May be whole wheat flour would be a good substitute for the cake.
