Vegetable Pulav, a go to rice dish in India is a one pot recipe made with rice, vegetables and aromatics spices. A delicious comfort food served with raita or yogurt.
Basmati rice – 1 cup
Vegetables – beans,carrot, potato ( total 1 cup)
Peas – 1/2 cup
Lima beans – 1/4th cup
Corn – 1/4th cup (optional)
Large tomato- 1 chopped
Green chilly- 3
Medium onion- 1 chopped
Fresh coconut – 1 tbsp
Ginger garlic paste- 3/4th tsp
Bay leaves- 2
Whole black pepper – 5
Cinnamon stick- 1/2 inch
Cumin seeds 1/ 2 tsp
Cumin powder and Coriander powder- 1/4th tsp each
Handful of mint & coriander leaves
Salt to taste
Lemon juice to taste
In a pan add a tablespoon of oil followed by bay leaves,cloves,cinnamon,cardamom,black pepper and 1/2 tsp of cumin seeds. Fry for few seconds. Now add the green chilly and onion. Fry till onion gets little soft.
Now add the ginger garlic paste. Fry a bit. Then add all the veggies, cumin and coriander powder and some salt.Cook for five minutes. Add the coconut, chopped tomato and cook for a bit
Now add the washed basmati rice, chopped mint and coriander leaves. Mix well.
Add two cups of water and salt. Mix. Bring to boil then reduce the heat and cook till the rice is done. Finally add some lemon juice.
Serve the pulav with raita or curry of your choice.
