Pizza – It’s the kids comfort food. No birthday party is complete with out it. Lot of kids don’t mind having pizza at any given time. There’s something about pizza that kids just can’t resist. The crunchy bread smothered with the sweet tomato sauce and topped with gooey cheese makes the kids go crazy about.
My little one loves pizza. Especially loves to pick and eat all the toppings. Sometimes i like to make it at home, so that i can make it little more healthy. I use whole wheat nan, lot of veggies and low fat cheese. Its a pan size pizza, which i just cook in a non stick pan. No need of oven!
Try this pizza as an afternoon snack! I am sure your kids would love it.
- Store bought whole wheat nan’s- 2
- White mushrooms- 10 ( cut to bite size pieces)
- Red and Green bell pepper- 1/2 each (cut to half inch length wise)
- Red onion- 1/2 (thinly sliced)
- Garlic cloves – 2 ( thinly sliced)
- Italian seasoning- 1/2 tsp
- Dry/fresh basil leaves – few pinches
- Pasta sauce to taste
- low fat mozzarella cheese
- Olive oil- 2 tsps
- Crushed red pepper to taste
- Salt and pepper to taste
In a pan add the olive oil. When the oil gets hot add onion and the garlic. Saute for a minute, then add the bell pepper. Add some salt. Cook for five minutes, till the bell pepper gets soft. Now add the button mushrooms and the other seasoning. Saute for another five minutes. Turn off the heat. Do not over cook the veggies. They still need to be little crunchy.
Take a non stick skillet add tiny amount of oil and toast one side of the nan for just few seconds. Now take out . Put some tomato sauce on the toasted side. Just enough sauce to cover 3/4th of the nan. Put the sauteed veggies and just enough low fat mozzarella cheese.
Turn on the stove to low-medium heat. Add a bit of oil and place the nan. Close the lid and cook for five minutes. The steam would make the cheese melt. Then remove the lid and reduce the heat to low and cook the nan till the base gets nice and crunchy. Remove and cut to triangles. Repeat with the other nan.
Whole wheat Nan Pizza served with some Watermelon juice
