Instant Pot Amaranth Dal | Thotakura Pappu

Hearty and comforting dal made with Amaranth Leaves and Toor Dal. This healthy Vegan and Gluten free dal can be enjoyed every day and makes for a fantastic vegetarian dinner. Sharing the Instant Pot method.

Ingredients

  • ½ cup toor dal
  • 1 bunch amaranth leaves cleaned, stems removed and chopped
  • 1 onion diced
  • 2 medium tomato chopped
  • 3 green chilly or to taste
  • 2 garlic pods sliced
  • 1.5 teaspoon coriander powder
  • ½ tea spoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 to 3 teaspoons tamarind paste
  • ½ teaspoon sugar
  • 2 teaspoons oil
  • 1 teaspoon salt or to taste

Instructions

  • Add oil into your instant pot and press the saute mode. Add the mustard seeds and cumin seed. Let the mustard pop.

  • Add the onion, green chilly, curry leaves and garlic. Saute for two minutes until onion turns soft.

  • Now add the tomato and cook for a minute. Make sure the toamto are ripe.
  • Now add the amaranth leaves, washed toor dal, salt, coriander powder, sugar and two cups of water and combine well..

  • Cancel the saute mode, close the vent and close the lid and turn the vent to sealing position. Press pressure cooker (manual mode) and adjust the cook time to ten minutes.

  • Once done, let the pressure release naturally.
  • Add the tamarind juice, and press the saute mode and cook the dal for two to three minutes to get the desired consistency. Taste the dal and adjust the seasoning. Serve the dal with rice, papad and pickle.

Notes

Tamarind paste can be substituted with lemon juice.
If you can't find amaranth leaves, spinach is a good substitution.
Green chilly can be replaced with red chilly powder.
