Bombay Grilled Sandwich

India's famous street food Bombay Sandwich served in grilled form. The addition of green chutney and chaat masala truly elevate this sandwich and make it one of the best desi sandwiches

Ingredients

  • 8 slices sour dough bread or white bread
  • 2 medium potato, boiled and sliced
  • 2 small tomato, sliced
  • 1 small green bell pepper, sliced
  • 2 small cucumber, peeled and thinly sliced
  • 1 small onion, cut to circles
  • chaat masala as needed
  • salt to taste
  • ½ stick softened butter
  • cheese as needed ( I used white cheddar)

Green chutney

  • 1 bunch coriander leaves, washed and roughly chopped
  • 1 small handful mint leaves
  • 1 tablespoon dry coconut
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger
  • 2 garlic cloves
  • 2-3 green chilis
  • 1-2 teaspoon lemon juice
  • salt to taste
  • water ( just enough to grind the chutney)

Instructions

Green Chutney

  • Add coriander, green chili, dry coconut, ginger, garlic, cumin, salt, lime juice, and water. Blend until smooth.

Boiling Potatoes in the instant pot -

  • Add 3 cups of water into the stainless steel insert of the instant pot. Place the washed potato and close the instant pot lid to sealing position.
  • Press the pressure cook button and adjust the time to 12 minutes. After the 12 minutes is done, wait till the pressure release naturally. When you insert a fork and it goes through easily but the potato doesn’t fall apart, means the potato is cooked right.

Making the Bombay Grilled Sandwich

  • Slice all the veggies – boiled potato, onion, cucumber, tomato and bell pepper.
  • Apply softened butter on two sour dough breads, followed by green chutney. Place sliced potato, tomato and green bell pepper. Add a pinch of salt and a generous pinch of chaat masala ( or sandwich masala). Add some cheese, its optional but helps to hold the veggies together.
  • Now add thinly sliced cucumber and onion, chaat masala and grated cheese and top it with the other bread.
  • Apply butter on top of the bread and on the grill and cook the sandwich till crispy, golden brown and the cheese melts. Serve immediately with Maggi sweet and spicy sauce.

Notes

You can either use chaat masala or sandwich masala. Both are easily available in Indian stores
Do not add too much cheese, just enough to hold the veggies together. The sandwich tastes equally delicious without the cheese.
