Chocolate Almond Flour Cookies

These Chocolate Almond Cookies are made with almond flour, chocolate almond butter and maple syrup. A simple 5 ingredient cookie which is soft and chewy and are grain free and oil free.

Ingredients

  • ½ cup almond flour
  • ¼ cup dark chocolate creamy almond butter
  • ¼ cup maple syrup
  • ½ teaspoon vanilla extract
  • 1 ½ teaspoon baking powder
  • few chocolate chips (vegan if desired)
  • 4 almonds optional

Instructions

  • To a medium bowl add ½ cup almond flour, ¼ cup almond butter, ¼ cup maple syrup, ½ teaspoon vanilla extract and 1 ½ teaspoon baking powder.
  • Mix it till well incorporated. At this point you can actually taste the batter for sweetness and add more maple syrup if desired.
  • Divide the dough into four equal parts. Make a round ball and place it on a baking tray lined with parchment paper. Slightly flatten the dough.
  • Top it with few chocolate chips and an almond in the middle. Bake in a preheated oven at 340 F for 10 minutes or until the top of the cookie is set. Do not get tempted to over bake them. The cookies will be soft when out of the oven, but will firm up in few minutes.
  • Let cool at room temperature and store them in a air tight container.

Notes

These cookies stay fresh for 4 days at room temperature and up to a week in the refrigerator.
Chocolate almond butter can be replaced with regular almond butter or peanut butter or Nutella.
Almond Flour  is available in Costco, and they are easily available in the bakery isle in the grocery store. You can also buy them online.
