Rava Waffles | Savory Semolina Waffles

Savory Waffles made with Semolina, also called as Rava Waffles or Suji Waffles in India. Made with Semolina, yogurt, veggies and spices these waffles are perfect to enjoy for breakfast and lunch.

Ingredients

  • 1 cup semolina (regular rava/suji)
  • ½ cup yogurt
  • ½ cup + 2 tablespoons water
  • cup onion, finely chopped
  • cup boiled corn
  • 2 tablespoons grated carrot
  • 2 tablespoons coriander leaves, finely chopped
  • 2-3 green chili, finely chopped
  • 2 teaspoons grated ginger
  • 1.5 teaspoons cumin powder
  • 1 teaspoon salt or to taste
  • ½ teaspoon eno ( or ¼ teaspoon baking soda)
  • oil to make the waffles

Instructions

  • To a large mixing bowl add 1 cup of rava (semolina), ½ cup yogurt and ½ cup water. Mix and let it rest for 15 minutes.
  • While the rava is resting chop all the veggies.
  • After 15 minutes, the rava would have absorbed all the liquid.
  • Now add ⅓rd cup onion, ⅓rd cup boiled corn, 2 tablespoons grated carrot, 2 tablespoons coriander leaves, 1.5 teaspoons cumin powder, 2-3 finely chopped green chili, 2 teaspoon grated ginger and 1 teaspoon salt.
  • Mix all the ingredients. As the batter was thick I added 2 tablespoons of water to it Set a side for five minutes.
  • Add ½ teaspoon of eno and a teaspoon of water on top of the eno to activate it. Mix it well.
  • Preheat the waffle maker and spray some oil. Pour the batter in the middle and spread the batter to fill the cavities and drizzle some oil.
  • Cook on low-medium setting in your waffle maker till done. Don’t make the waffle too crispy, it will end up becoming too chewy.
  • Enjoy with chutney or Maggi sweet and spicy sauce.

Notes

Rest the rava and yogurt mixture for 15 minutes to soften the rava.
Do not add too much water where the batter becomes thin.
Cook in low-medium setting to keep the waffles slightly crispy on the sides and soft inside.
If you don't like to add eno, you can skip it. Eno would make the waffle a bit more softer. I have tried both ways and liked it either way.
