Frozen Mixed Vegetable Fry

Frozen Mixed Veggies Stir Fry– quick and easy Indian style stir fry made with frozen veggies.

Ingredients

  • 2 heaping cups frozen mixed vegetables I used green beans, corn, carrot, green peas and lima beans
  • 1 medium onion, finely chopped
  • 1 tsp minced ginger
  • 1 tsp chopped garlic
  • 1 to 2 tbsp fresh grated coconut
  • 1 tsp red chili powder or to taste
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp chana dal optional
  • ½ tsp mustard seeds
  • 3 tsps oil
  • handul of chopped coriander leaves
  • salt to taste
  • lemon/lime juice to taste

Instructions

  • Heat oil in a pan and add the mustard seeds. When the mustard pops, add the chana dal and cumin seeds. Saute till brown. Add chopped onion, ginger and garlic and turmeric powder.
  • Saute till onion turn slightly soft, about five minutes. Now add the frozen mixed veggies. Give a mix ,close the lid and mix occasionally and cook till the veggies turn soft. You can splash little water while cooking to avoid burnt bottom.
  •  Once the veggies are cooked completely, add the fresh coconut, red chili powder, coriander powder, garam masala and salt.
  • Saute for another five minutes, taste and adjust the seasoning . Finally finish it off with some lemon juice and coriander leaves.
  • Serve the veggie stir fry with rice, rasam, pickle and yogurt.
