Servings: 12 laddu

Equipment

  • Food processor or a Blender

Ingredients

  • cup almonds
  • cup cashew
  • ¼ cup pistachio
  • ¼ cup sunflower seeds
  • 1 tbsp chia seeds
  • 2 tbsp raisins
  • 12 to 14 soft dates ( adjust to taste) add more if you like it much sweeter

Instructions

  • In a food processor or a blender add the cashew, almonds and pistachio.
  • Pulse it few time so the nuts break up. Do not make fine powder, keep few big chunks for a nice crunch in the laddu. Reserve 2 tbsps of the crushed nuts in a plate to coat them at the end.
  • Add in the chia seeds, raisins and soft dates.
  • Pulse them few times till all the dates break up and everything is well combined. If you feel the mixture is little dry and cannot form a laddu, add 1 to 2 tsps of water at a time and pulse it again. That should work.
  •  Take small portion of the mixture, and form a laddu. Coat the laddu with the reserved crushed nuts and enjoy them.

Notes

  1. The amount of dates, truly depends on how sweet the dates you are using are.
  2. If the dates are not soft, soak them in hot water for few minutes to soften.
  3. Raisins can be skipped in the recipes, just add few more dates.
  4. You can use nuts of your choice.
  5. If the mixture is dry add 1 to2 tsps of water at time and pulse it again till you can form a laddu. You don't prefer water, you can add ghee ( for non vegan laddu).
