Burned Garlic Fried Rice

Burned Garlic Fried Rice is made with fried garlic,rice and colorful veggies giving tons of flavor. Delicious and gets done in 20 minutes.

Ingredients

  • 3 cups cooked rice ( long grain or basmati rice) left over rice or rice at room temperature
  • 6-8 medium garlic cloves, chopped
  • ½ cup finely chopped green beans
  • 1 medium carrot, finely chopped
  • 1 small bell pepper, finely chopped
  • 2 spring onion, white and the greens
  • 3 tsp vegetable oil
  • 1 tsp sesame oil
  • 2 tsp soy sauce or to taste
  • 1-2 tsp vinegar
  • ½ tsp black pepper, crushed
  • 1 tsp chili garlic sauce or any chili sauce
  • ¼ tsp sugar
  • salt to taste

Instructions

  • In a large wok or a skillet, heat the oil in medium heat. Add the chopped garlic and saute till crisp and brown. Remove two teaspoons of the garlic and set a side.
  • Add the green beans, carrot, bell pepper, and white part of the green onion.
  • Toss and cook stirring continuously until vegetables are cooked thoroughly, about 5 minutes.
  • Add the cooked rice, reserved sauteed garlic, black pepper, soy sauce, vinegar, salt and sugar.
  • I also added some chili garlic sauce to the rice. You can add any chili sauce or skip it for milder fried rice.
  •  Mix well and cook it by stirring it occasionally so that the rice is hot and coated well with all the spices.
  • Serve the fried rice topped with green part of the spring onion and crispy fried garlic.

Notes

  1. Do not saute the garlic till dark brown, it will become bitter.
  2. Make sure the rice is cooled and dry before making the fried rice. 
  3. If making the rice fresh, spread the rice in large plate and let it dry a bit. 
  4. Soy sauce, vinegar and pepper can be adjusted according to your taste.
  5. Chili sauce is optional, if you are serving the fried rice by itself definitely add it. But if you are serving with astir fry you can skip it.
