Heat one teaspoon of ghee and add chopped cashew and almonds. Saute till light golden. Remove and set a side.
Add the rest of the ghee and semolina to the pan and roast the rava. Roast the rava in medium flame till it slightly changes color and you can feel nice aroma.
While the rava is roasting – in a pan add water and jaggery and simmer it for 7-10 minutes.
We need to roast the rava and boil the water jaggery mixture parallelly. Rava needs to be hot when we add the boiling jaggery water to it.
Reduce the heat to low and slowly add the jaggery water to the roasted suji little by little. Keep mixing to avoid lumps.
Adjust the heat to medium, close the lid and cook the halwa till it slightly thickens and cooked through. If you feel the suji needs to cook little more, add some hot water and cook for few more minutes.
Finally add fried cashew and crushed cardamom. Mix it well and enjoy the halwa warm.
