In a pan add the oil. When the oil gets hot add the mustard seeds.
When the mustard pops, add the chana dal, cashew and cumin seeds. Saute till light brown.
Add the green chili, chopped ginger and curry leaves. Saute for 30 seconds.
Then add the freshly grated coconut and saute for two minutes.
Add the coriander sand saute for a minute.
Finally add the cooked rice, cooked chana dal. lemon juice, salt and freshly chopped coriander leaves.
Mix well and check for seasoning.
Serve as is or as a part of the meal.
