Coconut Rice ( South Indian Style)

South Indian style coconut rice recipe made with fresh coconut and chana dal. It’s a mildly spiced rice recipe, which can be served as is or with a simple curry.

Ingredients

  • Cooked rice - 2 cups
  •  oil – 3 tsp
  •  mustard seeds - ½ tsp
  •  chana dal – ½ tsp
  • cumin – ½ tsp
  • cashew - 2 tsps
  • green chili- 2, slit
  •  ginger pieces – ½ tsp
  •  coriander powder ½ tsp
  • few curry leaves
  • fresh grated coconut - 1 cup
  • cooked chana dal-⅓ cup
  •  asafatedia- a pinch
  • coriander leaves for garnish
  •  lemon Juice – 1 tsp or to taste
  •  Salt to taste

Instructions

  • In a pan add the oil. When the oil gets hot add the mustard seeds.
  • When the mustard pops, add the chana dal, cashew and cumin seeds. Saute till light brown.
  • Add the green chili, chopped ginger and curry leaves. Saute for 30 seconds.
  • Then add the freshly grated coconut and saute for two minutes.
  • Add the coriander sand saute for a minute.
  • Finally add the cooked rice, cooked chana dal. lemon juice, salt and freshly chopped coriander leaves.
  • Mix well and check for seasoning.
  • Serve as is or as a part of the meal.
