To a pan add 1 cup + 1 tablespoon Sugar and ⅓ cup water. Mix and let the sugar dissolve and the mixture come to a rolling rolling boil.
Add 1 cup almond flour, 1 cup milk powder, 2 tablespoons milk and 2 teaspoons ghee.
Lower the heat and mix everything together to remove any lumps. Now increase the heat to medium and using a spatula continuously stir the mixture.
After few minutes to continuous stirring you will be observe that the mixture starts to thicken. Now add crushed cardamom powder and 1 teaspoon of ghee.
Keep stirring till the mixture starts leaving the sides of the pan. Once you observe that the mixture is leaving the pan, cook for another minute.
Now turn of the heat and transfer the peda mixture to a parchment paper which is greased with one teaspoon of ghee. Using a spatula keep folding the mixture for a minute.
Let it cool down for 5 minutes. Now when you touch, the mixture shouldn’t stick to your hand, but shouldn’t be dry either. If the mixture become too dry sprinkle some water and ½ teaspoon of ghee and knead the dough. But if the mixture is sticky, let cool for few more minutes or transfer it back to the pan and cook for 2-4 minutes.
Take small portion of the dough and make a smooth ball and flatten it slightly. I used tip of spatula to make lines on the top. You can also leave them plain. Garnish the peda with a piece of almond.
