Thinly slice two medium onion and add it a large bowl. Add one tablespoon finely chopped ginger, 2 chopped green chili, 1 spring curry leaves, handful of coriander leaves and one teaspoon salt. Mix it and let the mixture rest for 10 minutes.
After 10 minutes mix the onion mixture and add 1 cup besan, ¼ cup rice flour, ½- to 1 teaspoon red chili powder, ½ teaspoon ajwain, 1 tablespoon hot oil and ⅓ teaspoon salt.
Squeeze and mix all the ingredients well. Let the mixture rest for 10 minutes. Do not add any water at this point. If you feel there is lot more onion than besan in mixture, that’s prefect because that’s what we are looking for.
After 10 minutes mix it again. Add some water to adjust the consistency, just like pakoda batter. Divide the mixture to 4 equal parts.
Heat a waffle maker, drizzle some oil and place one of the mixture in the middle. Apply some oil on your hands and gently flatten the dough. Spread it thinly. Sprinkle some oil and cook the waffle till crispy and golden.
Repeat with rest of the dough. Serve the waffle immediately. Sprinkle some chaat masala and fresh coriander leaves.
