Savory Red Lentil Waffles
Indian style savory waffles made with red lentils. These waffles are vegan, filling and easy to make.

- 1 cup red lentils
- 2-3 green chili
- ½ inch ginger
- ½ cup onion, finely chopped
- ½ cup red bell pepper, finely chopped
- 1 tablespoon chopped coriander leaves
- ¼ teaspoon turmeric powder
- ½ teaspoon Kashmiri red chili powder (mild)
- 1 ½ teaspoon roasted cumin powder
- salt to taste
- 2 teaspoons flax seed powder
- 1 teaspoon lemon juice
- ½ cup water
- oil as needed to make the waffles
Wash red lentils and soak in plenty of water for atleast 4 hours or overnight.
Drain all the water and add the lentils to a blender. Add 2-3 green chili,½ inch ginger and ½ cup water and blend to a smooth batter.
Transfer the batter to a large bowl and add 1.5 teaspoon roasted cumin powder, ½ teaspoon Kashmiri red chili powder, ¼ teaspoon turmeric powder and salt to taste. Mix it well.
Add ½ cup each of finely chopped onion and red bell pepper, 1 tablespoon coriander leaves, 1 teaspoon lemon juice and 2 teaspoons flax seed powder.
Mix it well and set a side for 10 minute. If the mixture is too thick add some water to adjust the consistency of the batter
Heat a waffle maker, brush with oil and pour ½ cup of the mixture and spread the batter a little and drizzle some oil on the top.
Close the lid and cook till the waffles are crispy and golden.
These red lentil waffles tastes best when eaten right away.
Soak the red lentils atleast for 4 hours or over night.
While making the waffles spread the batter to keep it semi thick.
