Continuing with my love for Savory Waffles, sharing a waffle recipe made with red lentils. These waffles are golden and crispy on the outside and soft inside. Serve them hot with your favorite chutney or sweet and spicy chili sauce.
Red lentils (also called as Masoor Dal In India) is one of my favorite lentils to use in the kitchen. They are naturally gluten free and require very little time to cook.

How to make Savory Red Lentil Waffles (Indian Style)-
Wash red lentils and soak in plenty of water for atleast 4 hours or overnight.
Drain all the water and add the lentils to a blender. Add 2-3 green chili,½ inch ginger and ½ cup water and blend to a smooth batter.
Transfer the batter to a large bowl and add 1.5 teaspoon roasted cumin powder, ½ teaspoon Kashmiri red chili powder, ¼ teaspoon turmeric powder and salt to taste. Mix it well.
Add ½ cup each of finely chopped onion and red bell pepper, 1 tablespoon coriander leaves, 1 teaspoon lemon juice and 2 teaspoons flax seed powder.
Mix it well and set a side for 10 minute. If the mixture is too thick add some water to adjust the consistency of the batter
Heat a waffle maker, brush with oil and pour ½ cup of the mixture and spread the batter a little and drizzle some oil on the top.
Close the lid and cook till the waffles are crispy and golden.
Serve immediately with chutney of your choice.
Serving Suggestions:
These Red Lentil Waffles can be served with Chutney or Chili Sauce.
Reheating –
You can reheat the waffles in a toaster, or waffle maker.
You can also reheat them in a tawa/pan, drizzle some water and cook till heated through on both sides.

I doubled the recipe. I got 4 waffles. I think I need to thin out the batter more next time. They are fluffy and chewy. I’m looking forward to using them as a base for an open sandwich. I may add more spices next time. There are great possibilities.

I tried these for my sister who is vegan. They fell apart in waffle maker and were very fragile as pancakes. What did I do wrong?

Sorry to hear that…. was the batter too thin? After soaking the lentils, we need to drain all the water and then add just a little to grind the batter. The consistency of the batter should be semi thick. Did you add flax seed powder? It really helps hold the waffle together.
