Dosa waffles also called as Uttapam waffles are Indian style savory waffles made with dosa batter. Crispy and golden brown, these waffles will soon become your favorite brunch recipe.
What is Dosa Waffle?
Dosa waffle is a fusion take on the traditional uttapam recipe. Dosa batter is mixed with onion, carrot, coriander leaves and green chili and cooked in the waffle maker.
While the love for the traditional Dosa is boundless, you will definitely love this variation of using dosa batter.
The first step to making these dosa batter waffles is a well fermented dosa batter. I have two recipes in the blog for Dosa batter.
1- Dosa made with rice flour (my go to recipe)
You can use either of these recipes. I use my Vitamix to grind the batter and then ferment the batter in the instant pot. I prefer using instant pot to ferment the batter, as it gives me consistent well raised better every single time.
Ingredients Needed for the Dosa Waffles:
Dosa batter – preferably a day or two day old dosa batter.
Veggies – I used onion and carrot, you can also add tomato.
For heat – I added finely chopped green chili.
Step by Step method –
1- To a large bowl add the dosa batter which was already prepared.
2 & 3 – Add finely chopped onion, grated carrot, chopped coriander leaves and finely chopped green chili to the dosa batter. You can also add chopped ginger.
4- You may need to add a little bit of salt depending on how much salt your dosa batter. Mix all the ingredients. If the batter feels too thick, add 1 -2 tablespoons of water to it.
5- Preheat your waffle maker and spray it with oil. You can also brush it some oil.
6 – Preheat the waffle maker and spray some oil. To my round waffle maker I added about ¾th cup of the batter in the middle.Using a spatula spread the batter to fill the cavities and drizzle some oil ( optional).
Cook the waffle as per instructions. You can select the desired level depending on your preference. It took me 4 minutes for the waffle to cook. Once done, gently remove the waffle with a spatula and serve it with chutney.
Variations:
In addition to onion, carrot, coriander and green chili you can also add tomato, cumin seeds and ginger.
Tips & Notes:
I prefer the dosa batter which is atleast one day old. It has a slight sourness to it.
Add lots of finely chopped onion for taste and flavor.
Make sure the batter is neither too thick or too thin.
To Reheat –
Toaster – reheat them in the toaster till warm.
Pan – heat the pan, place the waffle, close it with a lid and cook in low flame till heated through. Now remove the lid, turn the waffle and cook for another 45 seconds.
Serving Suggestions:
These savory waffles can be served with chutney or Maggi sweet & spicy chili sauce.
