These Savory Chickpea Flour Waffles are inspired by Vegetable Pakora, a popular snack from India. Enjoy these gluten free and vegan waffles for breakfast or brunch.
The inspiration for these Chickpea waffles are Pakoras. Vegetable Pakora is a savory snack made with besan (gram flour), rice flour, veggies, green chili and spices. The batter is deep fried till crispy and golden and served with chutneys. It is one of the most popular appetizers in India.
This recipe is exactly that but in waffle form.

Ingredients :
Either Chickpea flour or Besan (gram flour) can be used.
Rice Flour – can be found in Indian store, online or in Asian isle in grocery store.
How to make Savory Chickpea Flour Waffles?
In a large bowl add 1 cup chickpea flour ( or besan), 2 tablespoons + 1 teaspoon of rice flour and 1 teaspoon cumin seeds. Add ¾ -1 cup water (start with ¾ cup and add more if needed) and whisk till no lumps are seen.
Add ½ cup finely chopped onion, ½ cup finely chopped red bell pepper, 2 tablespoons grated carrot, a big handful of chopped spinach, 1 tablespoon of coriander leaves, green chili-ginger paste ( 2 green chili & ½ inch ginger ground in a mortar), ¼ teaspoon turmeric powder, ½ teaspoon red chili powder, 1 teaspoon salt and 1 teaspoon lemon juice.
Mix everything and let rest of 15 minutes.
After 15 minutes add 10 cashews (chopped) and ¼ teaspoon baking soda. Mix and check for batter consistency. It should be slightly thick but easily pourable.
Heat a waffle maker and drizzle some oil. Pour the batter and spread it thin. Drizzle more oil and cook till crispy and golden. Repeat with rest of the batter and serve immediately.
Serving Suggestions:
These waffles taste great by itself but also tastes amazing with green chutney, date chutney or Maggi sweet and spicy chili sauce. Don’t forget to serve some chai or coffee with them.
