Savory Chickpea Flour Waffles | Vegetable Pakora Waffles

Ingredients

  • 1 cup chickpea flour ( or besan/gram flour)
  • 2 tablespoons + 1 teaspoon rice flour
  • 1 teaspoon cumin powder
  • 2 green chili
  • ¼ inch ginger
  • ½ cup onion, finely chopped
  • ½ cup red bell pepper, finely chopped
  • 2 tablespoons grated carrot
  • 1 big handful spinach, finely chopped
  • 1 tablespoon coriander leaves
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • 1 teaspoon salt or to taste
  • 1 teaspoon lemon juice
  • ¼ teaspoon baking soda
  • 10 whole cashew, chopped
  • oil as needed to make waffles
  • ¾ -1 cup water

Instructions

  • In a large bowl add 1 cup chickpea flour ( or besan), 2 tablespoons + 1 teaspoon of rice flour and 1 teaspoon cumin seeds. Add ¾ -1 cup water(start with ¾ cup and add more if needed) and whisk till no lumps are seen.
  • Add ½ cup finely chopped onion, ½ cup finely chopped red bell pepper, 2 tablespoons grated carrot, a big handful of chopped spinach, 1 tablespoon of coriander leaves, green chili-ginger paste ( 2 green chili & ½ inch ginger ground in a mortar), ¼ teaspoon turmeric powder, ½ teaspoon red chili powder, 1 teaspoon salt and 1 teaspoon lemon juice.
  • Mix everything and let rest of 15 minutes.
  • After 15 minutes add 10 cashews (chopped) and ¼ teaspoon baking soda. Mix and check for batter consistency. It should be slightly thick but easily pourable.
  • Heat a waffle maker and drizzle some oil. Pour the batter and spread it thin. Drizzle more oil and cook till crispy and golden. Repeat with rest of the batter and serve immediately.

Notes

Serve these waffles immediately to maintain the crispy top.
The left over batter can be stored in the refrigerator for 3 days. 
If you are not planning to use up the whole batter in a go, add baking soda right before you make the waffles.
You can skip the red chili powder and can add Schezwan chutney for more flavor.
